- 1 cup raw cashews (180g)
- 1/2 cup canned coconut milk (120 mL) shake the can well
- 2 teaspoons fresh lemon juice
- 3 tablespoons coconut sugar or brown sugar Add an extra tablespoon of sugar if you'd like a bit more sweetness
- 1 1/2 cups sliced OR 2 cups whole frozen strawberries (230g)
- 1 teaspoon pure vanilla extract
Soak the cashews in cold water for at least 30 minutes. Drain off the water in a colander or mesh strainer. Alternatively, boil the cashews for 5 minutes. Drain and rinse well under cold water.
Place first 4 ingredients in blender and blend on medium speed for 1 minute until very smooth.
Add strawberries and vanilla and continue to blend on medium speed for another minute until strawberries are completely blended.
Use your tamper if your blender has one to make sure everything continues to blend.
Turn the blender off a couple of times if necessary to mix it with a long handled wooden spoon or spatula. Be careful not to overblend since this will make the shake too thin and change its consistency.
Pour into chilled glasses.
