Ingredients

  • 1 cup raw cashews (180g)
  • 1/2 cup canned coconut milk (120 mL) shake the can well
  • 2 teaspoons fresh lemon juice
  • 3 tablespoons coconut sugar or brown sugar Add an extra tablespoon of sugar if you'd like a bit more sweetness
  • 1 1/2 cups sliced OR 2 cups whole frozen strawberries (230g)
  • 1 teaspoon pure vanilla extract

Instructions

  • Soak the cashews in cold water for at least 30 minutes. Drain off the water in a colander or mesh strainer. Alternatively, boil the cashews for 5 minutes. Drain and rinse well under cold water.
  • Place first 4 ingredients in blender and blend on medium speed for 1 minute until very smooth.
  • Add strawberries and vanilla and continue to blend on medium speed for another minute until strawberries are completely blended.
  • Use your tamper if your blender has one to make sure everything continues to blend.
  • Turn the blender off a couple of times if necessary to mix it with a long handled wooden spoon or spatula. Be careful not to overblend since this will make the shake too thin and change its consistency.
  • Pour into chilled glasses.
