Homemade Vegan Refried Beans

This refried beans recipe uses dried beans instead of canned for a much fresher, homemade flavor. With just a few simple, inexpensive ingredients, you'll have a delicious main meal or side dish to have alongside any Mexican food

Equipment

  • 1 large cooking pot or saucepan
  • 1 Stainless steel potato masher or food processor
  • 1 long handled wooden spoon
  • 1 large sautée pan or cast iron skillet
  • 1 mesh strainer or colander

Ingredients
  

  • 2 cups pinto beans
  • 2 tablespoons olive oil or vegetable oil
  • 6 cloves garlic peeled
  • 1 small red or white onion peeled and cut into quarters
  • 2 teaspoons mild chili powder
  • 1 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper or hot chili powder optional
  • 1 teaspoon salt adjust to taste

Instructions
 

  • Throughly wash the raw beans by placing in a bowl of fresh, cold water. Remove any small pebbles or damaged beans. Drain off the water in a colander and rinse again.
  • At this point, beans may be soaked overnight if you prefer. Simply place the beans in a large bowl and cover with fresh, cold water by at least 2 inches. Place in the refrigerator overnight.
  • (If you've soaked your beans, strain out the water and rinse them again). Add the beans to the pot with 8 cups of  cold  water. Add the onion and garlic and cover with a lid.
  • Start cooking the beans over high heat, then when just beginning to boil, turn heat to low and simmer, covered, for about 2 hours.
  • Drain the beans in a colander placed into a large bowl, reserving the liquid and set it aside.
  • Add the beans to a food processor with 1/4 cup of the reserved cooking liquid. Process for a few seconds.
    Or, to a large stainless steel sautée pan, add 1 tablespoon of olive oil. Heat over low heat, add the beans and mash well with a potato masher.
  • Add 1/4 cup at a time of the reserved bean cooking liquid to either the food processor or the sautée pan and continue to mash until you reach the desired consistency.
  • Add the 2 tablespoons olive oil, spices and salt. Stir well and adjust the seasoning amounts if needed to your liking.
